Depending on how you like to brew your fresh roast, some Monoamine Coffee may call for sweetness — our Honey Cinnamon Latte especially — starts with a top ingredient: Manuka honey. It's not the cheapest option, and it's not the easiest to source. Here's why we use it anyway.
What Makes Manuka Honey Different
Manuka honey comes from bees that pollinate the manuka bush, native to New Zealand and parts of Australia. Unlike clover honey or generic honey blends, manuka honey is prized for a few distinct traits:
• A bolder, earthier flavor. Manuka honey has a rich, almost molasses-like depth compared to the light sweetness of standard honey. That makes it a better match for coffee's natural bitterness — it complements instead of just masking it.
• Natural composition. Because manuka honey isn't blended or diluted the way many commercial honeys are, it carries more of its raw character into whatever it's added to.
• Traceability. Quality manuka honey is typically rated and sourced with more transparency than mass-market honey, so we know what's actually going into our cans.
Why Honey Beats Refined Sugar in Cold Brew
Cold brew is already smooth and low-acid — the last thing it needs is a sweetener that flattens it out. Refined white sugar dissolves into pure sweetness and nothing else. Honey brings sweetness plus flavor:
1. It rounds out bitterness instead of just covering it up.
2. It blends smoothly into cold liquid without the graininess sugar can leave behind in a colder brew.
3. It pairs naturally with warm spices like the cinnamon in our Honey Cinnamon Latte, building a more layered flavor instead of a flat, one-note sweetness.

Manuka honey costs more than syrup or table sugar, and it changes how we have to plan our costs. We think that's worth it. A brewed coffee that's meant to hold its own — not just as a novelty, but as something people reach for again — needs ingredients that earn a second pour.
